The kitchen ecological unit serves as the core module of a the grease and smoke purification system. Proper selection and configuration are essential for ensuring consistent compliance with emission standards while reducing operation and maintenance costs—making them a critical aspect of ventilation and environmental design for commercial kitchens.

The first step in equipment selection is to determine the required airflow based on the kitchen’s operating conditions. For cooking processes that generate significant amounts of smoke and oil mist—such as stir-frying or deep-frying—a higher airflow capacity is necessary. It is also essential to calculate duct resistance and account for sufficient static pressure margin to prevent airflow degradation and ensure effective exhaust. For primary purification, an electrostatic precipitator (ESP) module is the preferred choice, which can be supplemented with downstream components such as UV photolysis units or activated carbon adsorbers. In environments with heavy oil-laden smoke, an ESP system must serve as the core purification method, while activated carbon should be used only as an auxiliary for odor removal to prevent the filter media from becoming rapidly saturated or clogged.

Furthermore, attention must be paid to component compatibility and installation requirements. The dimensions of the units and the specifications of the connection interfaces must align with the exhaust ductwork and fan parameters; the fan’s static pressure must be sufficient to overcome the total resistance posed by the treatment units, elbows, and the entire duct system. In terms of layout, components should be positioned as close to the smoke collection hood as possible to minimize the distance that grease-laden air must travel, thereby reducing grease accumulation within the ducts and lowering the risk of fire. Additionally, adequate space should be reserved for maintenance access to facilitate the cleaning of collector plates and the replacement of filter elements.

Compliance and operational maintenance must not be overlooked during system configuration. Prioritize modular units that offer stable purification efficiency and are easy to disassemble and clean; avoid integrated, fully enclosed structures. Control modules can be equipped with pressure-differential monitoring to provide a clear indication of clogging, facilitating scheduled maintenance. Electrical components must feature robust waterproofing and fire protection to meet fire safety and environmental regulatory standards.

Finally, the entire system should undergo integrated testing and commissioning to strike a balance between smoke extraction performance and noise levels. A higher airflow rate is not necessarily better; excessive airflow leads to high energy consumption and noise levels that may exceed permissible limits. Configure modular units in a scalable, demand-based manner to simultaneously address grease particles and odors, ensuring environmental compliance, operational stability, and cost-effectiveness over the long term.
