A commercial kitchen ecological unit is an integrated purification system that combines electrostatic grease removal, UV deodorization, and activated carbon adsorption. Airflow capacity is the primary parameter for equipment selection; it directly determines the effectiveness of grease and odor removal, while also influencing operational stability and compliance with emission standards. Standardized commercial models typically offer a minimum processing capacity of approximately 2,000 m³/h, with a maximum capacity of up to 15,000 m³/h for a single unit; through multi-module configurations, this capacity can be expanded to 40,000 m³/h or even higher.

Units with a minimum airflow capacity of 2,000 m³/h are typically used in small shops, bubble tea stores, or casual dining stalls. They are designed for setups with a single cooking burner—environments characterized by limited space and a low volume of cooking fumes. If the airflow falls below this threshold, the internal air velocity becomes too low, causing grease to accumulate on the electric field, UV lamps, and activated carbon layers. This clogs the airflow channels, necessitates more frequent cleaning, leads to the development of unpleasant odors, and prevents the equipment from achieving consistent purification performance.

The standard single-unit capacity is up to 15,000 m³/h, designed for large and medium-sized restaurants, canteens, and fast-food kitchens; it can accommodate the simultaneous high-heat stir-frying of more than six burners. If the airflow volume exceeds the equipment's rated maximum, the air velocity becomes too high, preventing grease particles from being captured by the electrostatic field and leaving insufficient dwell time for UV photolysis. This leads to a significant drop in grease and odor removal efficiency, often resulting in visible smoke at the exhaust outlet and emissions that exceed regulatory limits.

In practical engineering applications, these ecological units support modular assembly; multiple units can be connected in parallel to increase airflow capacity as needed, making them suitable for environments with high levels of cooking fumes, such as food courts and large-scale central kitchens. When selecting equipment, one should not focus solely on maximum airflow capacity; instead, it is essential to ensure that the unit’s airflow is properly matched with the fan capacity and duct resistance, allowing the system to operate stably within its rated range over the long term. An appropriate airflow configuration not only ensures effective removal of cooking fumes and odors but also helps control energy consumption and reduce operation and maintenance costs, all while meeting environmental emission standards for the catering industry.
